This I first made when I just left school. In that limbo time before  I started working.

I got this recipe from a friend of my mother. Her name was helga. A lovely German Lady. So I can only assume this recipe has German origin.

Its quite time consuming to make, but its really worth it. I fed it to a good friend of mine the first time I made it. Rebecca still mentions it every now and then. Its rather rich, and not quite a soft spongey cake, yet still partially soft.

Please note, You cant just leave this cake baking. Each layer is baked seperately. So it really takes time.

You need the following Ingredients:

250g Butter (No marge. You will not be making this with plastic)

200g Sugar

5 Eggs

200g Flour

50g Corn Flour

80ml Milk

1 Zest of lemon

20 ml Stroh Rum

Topping :

150g Icing sugar

30g Cacao

30 ml  Warm water

25g Butter

30ml Stroh Rum

Method:

Cream the butter and sugar slowly. Add 1 egg, Flour(sieved),Corn flour(sieved) and milk to the butter mixture.Divide this into two mixtures.

In the one mixture, add the lemon rind. To the other add the cocoa and rum.

Take a Baking pan, approx 10cm deep. Grease it well, and put a piece of Wax paper for the bottom.

Spread out about three tablespoons of dough in the bottom.I usually start with the white dough. This must be enough dough to cover the entire layer of the pan. Bake this under the grill for about two minutes. Do the same with the other type of dough. Each layer must be fairly well cooked before applying the next layer of dough. Continue alternating the doughs until your dough is depleated.

For the topping, sieve the icingsugar and cocoa together. Mix with the water and melted butter and rum. Spread this over the tart.

Remember, the alcohol in the cake is baked out. The icing, not so much. So if you are feeding this immediately, there will probably be some dop being consumed. This has made some of my, uhm, less alcohol aclimatized friends a bit more friendly if you know what I mean!
